Protein-Packed Banana Nut Oatmeal with Chocolate

This isn’t your basic oatmeal. Packed with protein from nuts and seeds, fiber, and other healthy ingredients; this delicious one pot meal will leave you satisfied all morning long!

So often breakfast is either a sugar-laden, hurried afterthought caught in the midst of a hectic morning, or forgotten altogether. The other problem I run into is that when I make an effort to have a healthy breakfast, I fall into the egg rut…and one can only eat so many egg breakfasts before running to the nearest Starbucks or knocking their kids out of the way to dive into their cereal!

Enter oatmeal. It’s filling and warm, and you can dress it with pretty much anything based on what you’re in the mood for. This rendition was inspired by my husband’s love for all things banana/chocolate/nut flavored. I’m not kidding, he would eat that flavor profile every meal for the rest of his life and die happy.

This oatmeal is high in protein, fiber, good fats, and added Brazil nuts to provide you with enough selenium to keep your thyroid happy.

Protein Packed Banana Nut Oatmeal with Chocolate

Ingredients

  • 1/4 cup Quick Cooking Steel Cut Oats
  • 1/2 cup Non-Dairy Milk
  • 1/2 cup Water
  • 1/4 cup Nut Butter of your choice
  • 1 tsp Vanilla Extract
  • 1 tbsp Chia Seeds
  • 1 tbsp Hemp Seeds
  • 1/4 cup Unsweetened Coconut Flakes
  • 1 pinch Sea Salt
  • 1 Banana, broken into bits
  • 3 Brazil nuts, roughly chopped Great for selenium!
  • 1 small handful Chocolate Chips Lilly's & Enjoy Life are good brands

Instructions

  • Add everything except the Brazil nuts and chocolate chips together into a small pot
  • Cook over medium heat for roughly 7 minutes, stirring often nd breaking up bits of banana as the oatmeal cooks
  • When all the liquid is absorbed, you'll know it's done!
  • Transfer oatmeal to a bowl, then top with roughly chopped Brazil nuts and chocolate chips
