Nut Butter Dates- An Easy Whole30 Snack

You know when you reach that point in Whole30 that you need a snack, but you also feel like you’ve been cooking every second of the day since you started, and anyway every dish you own is dirty and in the sink? Enter these amazing little morsels that will ease you right out of the Kill. All. Things. phase and back to feeling human again. These are sweet, salty, and savory all at once, easy to put together, and no one will judge you for eating them right off the counter rather than dirtying another dish.

Most people that I know who have done a Whole30 develop a serious relationship with dates…if you’re on your first one right now, make this recipe and you will understand why!

I promise these snacks will become a regular go-to during your Whole30…and you’ll keep making them after! A little behind-the-scenes info for you: the reason these dates came to be my first post is because while I was trying to learn my way through getting my blog set up, my culinarily-challenged husband requested a snack, and I figured making these would get me off the hook quickly with him and provide me with an easy subject to work through my first post.

Yes, these snacks hold a special place in my heart… Not only have they helped me (and my family!) endure a few Whole30s myself, I’ve made them as appetizers, and even brought them to potlucks where they are always gobbled up. It’s the best kind of dish- one that doesn’t require a lot of effort, but gets you maximum praise of course!

Use any kind of nut butter you have available. Cashew butter is heavenly, almond butter is a treat. If you’re looking to avoid nuts altogether, use sunbutter (made from sunflower seeds). I used a mixed nut butter I found at Costco that includes almonds, cashews, pumpkin seeds, chia seeds, and flax seeds- anything you have on hand will be tasty!

This recipe has a healthy mix of fats and protein to keep you satiated, the salt gives you sodium that will help keep your electrolytes balanced, and the dates will make your soul happy.

Nut Butter Stuffed Dates

In this Whole30 snack, nut butter, sea salt, and dates come together to create a sweet, salty, and savory treat!

Ingredients

  • 6 tbsp nut butter, any kind you like!
  • 6 dates make sure to remove the pit, if needed
  • 1 pinch coarse sea salt

Instructions

  • Remove the pit from your dates, if necessary.
  • Cut each date open lengthwise, so you're left with a date "boat" shape.
  • Plop a tablespoon of nut butter on each date. More for larger dates, less for smaller dates.
  • Sprinkle coarse ground salt on top of the nut butter.
  • Eat one, or all six, no one is judging you here.
