Easy InstantPot Beef Stew
This beef stew is a hearty easy meal you can make in 20 minutes, and feel good knowing it's good for you too! Whole30 compliant, paleo, and naturally gluten free!

- 1 lb ground beef
- 1 TBS coconut oil
- 1 large onion
- 1 bunch celery
- 1 TBS fresh minced garlic
- 1 28 oz can diced tomatoes
- 1 lb carrots
- 3 large white potatoes
- 4 cups beef broth
- fresh parsley to garnish optional, only if you're feeling fancy
- salt & pepper to taste
Set your InstantPot to saute, and add coconut oil. When the coconut oil is melted, add ground beef; break apart and brown. ***
While meat is browning, begin chopping your vegetables.
When meat is mostly browned, add onions, celery, and garlic to caramelize a bit while you continue to chop the other vegetables.
Add other ingredients (except fresh parsley, if using) as you get them chopped.
When everything is added, put the lid on your InstantPot to seal, and set it to 'Pressure Cook' for 8 minutes.
When the timer goes off, release the pressure, garnish with fresh parsley if you're using it, and serve!
*** Depending on the fat ratio of the ground meat you're using, browning can yield a lot of fat. If you don't like the look, taste, or texture of fat- drain it off at this point. You can use a serving spoon, or my special trick- a turkey baster!
